Capon (3-4 kg)The Farm Capon of Tourneboeuf is a cock having undergone an operation practised in an ancestral way so that his flesh remains soft and smooth during its growth. It is characterized by the absence of crest. The capon has for origin the limitations of grains at the time of the Roman Empire. It was then noticed that this type of poultry was reaching a high weight for an equal amount of grains consumed. Nowadays, capon is raised for the tenderness of its flesh. It is fed outdoors for several months with a mixture of wheat and corn. What makes our capons special is that some weeks before being prepared; we feed them of a subtle mixture of cereal and milk. You will appreciate this meat which gets untied and melts by itself in the mouth. This is due in particular to its high quantity of fat. If it can appear to you as a constraint, be aware that mono and poly unsaturated fatty acids contained in this fat are essential to the good blood circulation in your body.
